Creamy Sweet & Sour Cucumber Salad
1 Large fresh cucumber
1 small white onion sliced thin (optional)
4 ounces sour cream (save fat & calories by substituting fat-free or low fat)
2 tsp. vinegar
3 tsp. sugar (optional)
Milk to desired consistency (whole milk will provide a creamier consistency while skim milk will be more “liquidy”)
1. Peel the cucumber and cut into thin slices. Salt the slices and squeeze gently {it is important to squeeze the cucumbers once sliced and salted to remove the extra liquid so that the salad is not watery and I usually let them sit in a strainer in a bowl in the refrigerator for about an hour to allow any extra juice to drain.
2. Combine sour cream, sugar, vinegar and milk blending well.
3. Add cucumbers and onion to cream sauce.
4. Cover and chill for at least 1 hours prior to serving.
