PORK RIBS / SPARERIB




Oven Baked Pork Ribs with Dirty Mashed Potatoes and Valerianella

  • about 1 kg pork baby ribs
  • 200 ml semi dry wine
  • 2 fresh rosemary branches
  • half a lemon for its juice
  • 2-3 teaspoons hot paprika
  • 1 kg medium sized healy potatoes
  • 50 mg butter
  • 4-6 garlic cloves
  • 100-200 ml milk (depending on how much the potatoes will envelope)
  • salt and lots of freshly ground black pepper to taste
  • a casserole of valerianella leaves or other small leaf salad greens
Preparation method:
  1. Wash the ribs then tap them dry with kitchen paper towel.
  2. Place the ribs and the branches in an ovenproof dish, pour over the wine, the juice of half a lemon and sprinkle the salt and paprika. leave it to marinate overnight.
  3. Preheat the oven to 170 C.
  4. Wash thoroughly the potatoes but leave their skins on, halve the much bigger potatoes.
  5. Remove the ribs from the marinade and place them ribs in the oven on a grille.
  6. Put the potatoes in the marinade tray and place the tray in the oven under the ribs grille.
  7. Bake them for 2 1/2 - 3 hours. Meanwhile test the potatoes if they are fork ready and when they are remove them from the oven.
  8. Chop the garlic.
  9. Melt the butter in a heavy bottomed pot, add the garlic and fry it until fragrant and translucent.
  10. Add about 2/3 of the milk to the pot and heat it up, remove the pot from the fire when the milk is hot but not yet boiling.
  11. Add the unpeeled baked potatoes to the pot and using a wire potato masher, mash them up roughly, stopping when the potatoes still retain some texture and have still some smaller lumps.
  12. Season it wit salt and plenty of pepper, add some more butter or milk if needed.
  13. Serve while the ribs and potatoes still hot, add some green leaves on the side, I used valerianella ones*chefdePaprika*19/3/13

    4e Sweet Chillie sauce
    50ml Worcestersous
    250ml Vleisaftreksel
    Meng als saam
    Gooi in kastrol en prut vir 10 min
    Lê vleis in warm sous vir 30min
    Verwyder uit sous en braai tot bros

    Verder het jy nodig:
    2 knoffelhuisies, fyn opgesny
    2cm gemmer, gerasper
    125ml heuning
    60ml lemoensap
    60ml appelasyn
    125ml tamatiesous
    30ml Worcestershire-sous
    varsgemaalde swartpeper
    Metode:
    Meng al die bestandele en gooi oor die ribbetjies.
    Maak alles dig toe en... hou vir ten minste 24 uur in die yskas.
    Braai jou spare ribs oor medium kole, eers die beenkant en dan die kant met die vleis. Gewoonlik neem dit so 10 minute per kant. Kosmater

    Sous:90ml Sojasous
    90ml Tamatiesous

    45ml Bruinsuiker
    10ml Fyn Gemmer
    20ml Sweet-chilli sous
    Geurmiddels: 30ml suiker, 3ml sout, 2ml paprika, 2ml borrie, knippie droe mosterd.
    Meng al jou best. van jou sous en laat dit oornag staan. Meng nou jou geurmiddels en vryf dit oor jou rib en laat dit so 2h staan. Smeer nou jou sous lekker oor jou rib en laat dit so n 30-40min. marineer. Braai stadig oor lekker kole of bak dit in die oond. Smeer kort kort van jou lekker sousie oor!!!Baie lekker dit belowe ek julle..Helena

    4 rooirissies (of meer, as jy van brand hou) fyngekap
    4 knoffelhuisies, afgeskil en opgekap
    ¼ koppie Worcestersous
    ½ koppie bruinasyn
    ½ koppie heuning
    1 teelepel sout
    1 kg varkribbetjie
    Metode:
    1 Meng die rissie, knoffelhuisies, Worcestersous, heuning en sout in ’n voedelverwerker. Hou eenkant.
    2 Plaas die ribbetjies in ’n bakplaat en verf die helfte van die marinade oor. Maak toe met foelie en plaas vir minstens ’n uur in die yskas.
    3 Verhit die oond tot 180 °C. Bak die ribbetjies vir 30 minute en stel die tempetaruur op tot 200 °C.
    4 Verf die res van die marinade oor en bak vir nog 30 minute. Strooi ekstra soutvlokkies oor as jy dit verkies WEG” 22/10/10 !!!Baie Lekker !!Helena ♥

    ½ teelepel sout
    1 teelepel brandrissiepoeier
    3 eetlepels bruinsuiker
    1 eetlepel paprika
    1 eetlepel fyn komyn
    Metode:
    Meng alles en smeer die varkrib goed daarmee in.
    Sit die rib in ’n bakpan (vetkant na bo) en sit dit vir minstens drie uur in die oond op ’n lae hitte (sowat 100°C). Moenie dit omdraai nie.
    Laat dit afkoel en hou dit in ’n verseëlde bak in die yskas.
    SOUSIE:
    ½ koppie witasyn of suurlemoensap
    ½ eetlepel sout
    1 eetlepel sterk sous van jou keuse, of ’n halwe teelepel van Tabasco
    gemaalde swartpeperkorrels na smaak
    1 eetlepel bruinsuiker
    Meng al die bestandele góéd saam.
    Braai!!
    Maak die rib regop in ’n rooster langs die vuur staan. Draai dit omtrent elke tien minute om sodat dit alkant hitte kry, en verf gereeld van die sous aan “Weg” 7/12/10 Dit is mos nou LEKKKKKER!!!!Helena

    Marinade:
    80 ml (1/3k) heuning
    60 ml (1/4 k) sojasous
    45 ml (3e) oestersous
    30 ml (2e) sagte bruinsuiker
    7 cm stuk vars gemmer, gerasper
    3 knoffelhuisies, fyngedruk
    15 ml (1e) tamatiesous
    1 ml (1/4t) sout
    1 ml (1/4t) rooipeper
    1 ml (1/4t) fyn kaneel
    Metode:
    Rangskik ribbetjies in n enkellag in n nie-metaalagtige bak. Meng alles vir die marinade en giet oor ribbes. Bedek en marineer minstens 8 uur lank of oornag.
    Voorverhit oond tot 190°C en rangskik ribbetjies op die roosterrak van die oondpan. Oondbraai sowat 50-60 minute lank, terwyl gereeld met marinade bedruip word. Draai elke 10 minute om. Sny in ribbetjies.

    Tequila Spareribs Recipe

    1 pork ribs
    salt and pepper to taste
    1 cup olive oil
    juice of 4 limes
    1/2 cup of gold tequila
    1 onion-finly chopped
    2 TBS. minced garlic
    2 jalapinos, stemmed,seeded and finely minced
    Season ribs with salt and pepper. in a small bowl, whisk oil, lime juice, tequila, onions, garlic,jalapinos .Place ribs, meat side down in a glass baking dish. pour marinade over ribs, coating both sides completely. cover with plastic wrap and refrigerate for at least 12 hours.turning every few hours Remove from fridge and bring to room temperature while grill is heating.use a low temperature to grill and grill for 1 1/2-2 hours, untill ribs are tender

    1kg pork/lamb ribs
    125ml tomato sauce
    125ml chutney
    300ml coke cola
    1 packet brown onion soup
    Mix ingredients for marinade. Put ribs in a large oval roaster and cover with marinade. Put in a cold oven. Swith to 160c and bake for 2 hours. Serve with rice and a fresh salad.

    Onthou, dis baie goedkoper per kg om ribbetjies sonder marinades en souse te koop. Vleis wat na aan die vervaldatum is word gereeld met souse verdoesel, so bly liewer weg daarvan en maak jou eie liplekker ribbetjies tuis; hierdie gaarmaak metode bly 'n wenner!

    Serves 4
    1 Kg Pork or Lamb Spare ribs, cut into strips between ribs
    1 Onion, peeled
    1 Clove of Garlic, peeled
    6 Peppercorns
    3 Bay leaves
    Water to cover
    Sauce:
    150ml All Gold Tomato Sauce
    75ml Mrs. Ball’s mild Chutney
    1 Onion, chopped
    1 Clove of Garlic, crushed
    5ml Ina Paarman Seasoned salt
    5ml Mustard Powder
    2ml dried Basil
    50ml Vinegar
    50g light brown Sugar
    12,5ml Worcester Sauce
    1ml Tobasco Sauce
    12,5ml Soy Sauce
    75ml Honey
    50ml Apricot Jam
    Step 1: In a large saucepan, place ribs, onion, garlic, peppercorns and bay leaves, cover with water. Simmer 40 – 50 minutes or until meat is tender, pour off water.
    Step 2: In a saucepan, place all sauce ingredients, stir gently over low heat for 10 minutes.
    Step 3: Place ribs in a suitable container and cover with sauce. You can do this the previous day or a couple of hours before braaing the ribs.
    To complete: Braai the ribs over medium hot coals, turning and basting frequently with the sauce until ribs are crisp. Do this at a leisurely pace; do not hurry it along over too hot coals. (I’ve never heard any man complaining about dragging out a braai…..so enjoy guys!)

    Bestanddele:
    1 Vark ribbetjie met lies (vel moet aan wees vra net vir jou slaghuis)
    Tamatie en Chilli konfyt (Woolworths verkoop dit)
    Aartappels
    Metode: (sluit die voorhek en maak die honde aan `n boom vas)
    1. Was aartappels en sny in 1cm stukke.
    2. Plaas in 'n bak en gooi kokende water oor en laat staan vir 10 minute
    3. Pak die aartappels in 'n bak, bedruip met olyfolie en bak in die oond vir 20 minute. (220 grade celsius)
    4. Sit die varkribbetjie in 'n oondbak en strooi met sout en peper.
    5. Bak in die oond vir 30 minute (220 grade celcius) - totdat die hele vel "ge-crackle" het.
    6. Neem skerp mes en verwyder die vel (Crackling). Die vleis is op hierdie stadium nog nie gaar nie.
    7, Smeer die varkribbetjie met die tamatie en chilli konfyt, sit dit bo-op die aartappels en plaas terug in die oond vir nog 'n 30 minute - 40 minute (180 grade Celsius) tot gaar.
    Sny die "crackling" in repe en bedien saam met ribbetjie en lekker vars slaai & brood
    GENIET en passop vir jou vingers!
