Cucumber Rolls
1 cucumber sliced on a mandolin1 package chopped crab meat (1 ½ – 2 cups)
1 package cream cheese softened
2 heaping spoonfuls sour cream
½ cup chopped sweet pepper (bell or banana)
¼ cup chopped fresh basil
Salt and pepper to taste
Sesame seeds (optional)
In a mixing bowl add everything but the cucumber and sesame seeds. Stir to mix the filling together. Roll the filling in a cucumber slice
Place in the refrigerator for 30 minutes to an hour to chill.
Sprinkle with sesame seeds and serve.**26/4/13
