Koek:
Bestanddele
3 kop koekmeelblom
4 teelepels bakpoeier
2 koppies suiker
1 teelepel koeksoda
80ml cocoa
Knippie sout
2 koppies kook water
10ml vanilla
50ml asyn
1koppie olie
Stroop:
1 kop water
1 kop suiker
5ml vanilla essens
Versiering:
1 kop suiker
50ml koekmeelblom
50ml cocoa
375ml water
50ml botter
Metode:
Koek
Meng alles saam
Skep in vierkantige pan
Bak 20min @ 180°
Stroop
Kook alles saam net vir 1 min
gooi oor koek sodra koek die uit oond kom
Versiering: 
fantasties en nie eens te soet nie!!!
Meng alles saam en kook tot dik
Gooi oor koek.

Klits eiers & suiker saam tot room (+/- 30 minute per hand met hand klitser)

Vou eier mengsel in.
Kook melk & botter saam. Voeg melk by eier / meel mengsel & meng goed.
Roer vanieljegeursel in. 
Gooi mensel in gesmeerde koek panne. Bak vir 15 – 20 minute in oond van 180 grade C.

1 ½ k Suiker                                                 
1 ½ k Koekmeel
Knippie Sout
1 t Vanilla
¾ k Melk
1 eetl Botter 
3 tlp Bakpoeier

Vulsel:
500 ml Melk 
75 ml (1/2 k) Vla
100 g Botter
200 g Strooisuiker

Klop eiers & suiker tot room. Roer meel & sout by. Kook melk & botter en roer dit saam met vanilla by meelmengsel in. Roer nou bakpoeier by.
Bak 25 min by 180º C. 

Kook melk. Meng vla met bietjie melk en maak dik vla. Laat yskoud word en roer kort-kort.
Klop botter & strooisuiker tot room en klop vla by.
Smeer tussen lae en bo-op.

250ml gesifte koekmeelblom,
75ml/40g mielieblom,
5ml bakpoeier,
1ml sout,
5 eiers,geskei,
250ml/210g strooisuiker,
100ml yswater.

Oond 180C, 2 koekpanne, 25-30minute. Sif meel, mielieblom, bakpoeier en sout saam.
Klits eiergele en suiker saam tot romerig. Klits yswater geleidelik by. Vou droe bestanddele met slaplemmes in eiermengsel in. Klits eierwitte to...t styf en vou ook in. Gooi in panne en bak.

Vlasous:
500ml melk,
75ml/40g vlapoeier,
1ml sout,
125g sagte botter,
250ml/210g strooisuiker,
5ml vanielje, paar druppels amandelgeursel-ek laat dit uit, hou nie van die smaak nie, geroosterde klapper.

Verhit 400ml van die melk en los vlapoeier in die oorblywende 100ml op. Voeg sout by. Roer vlamengsel vinning in warm melk met 'n draadklopper, roer aanhoudend en kook tot dik. Laat afkoel. Klop botter en suiker tot lig en donsig. Roer geursels by en klits koue vla dan geleidelik by. Smeer vulsel dik tussen lae, ek het dit in 4 gesny, rondom en bo-op koek en bestrooi met klapper. Geniet.

VLAVERSIERSEL:
500 ml melk,                    
80ml vlapoeier,
310 ml strooisuiker,          
125g margarien
knippie sout                    
1t vanieljegeursel.

METODE:
Voorverhit oond 180ºC.
Klits eiers e suiker tot lig. Smelt die melk en botter saam.  Sif meel en sout saam en voeg om die beurt met die melkmengsel by die eiermengsel. Strooi nou bakpoeier bo-oor en roer deur.  Giet in 2 ronde gesmeerde 22cm losboomkoekpanne.  Bak 30-35 min. Laat effens afkoel in panne. Keer uit op draadrakke en laat heeltemal koud word.

VERSIERSEL: Mikrogolf melk en vlapoeier tot verdik roer af e toe laat afkoel.
Klits suiker margarien sout e geursel saam tot romerig. 
Voeg by die vla e klits goed. 
Halveer beide koeklae en smeer vlaversiersel tussen die lae asook bo-op die koek.


Mikrogolf Vlakoek

125 ml water
45g margarien
2 eiers
200 ml witsuiker
250 ml koekmeelblom
10 ml bakpoeier
knypie sout
5 ml vanieljegeursel
Vulsel:
250 ml melk
20 g vlapoeier
knypie sout
62.5 g margarien
125 ml strooisuiker
2.5 ml vanieljegeursel

Bespuit 22-cm koekbak.
Bedek die boom van die bak met ‘n sirkel papierhanddoek.
Mikrogolf die water en botter 1 min oop by 100 % krag.
Klits die eiers en suiker baie goed saam tot lig en sponsagtig dik. Sif die meel, bakpoeier en sout saam en vou dit by die eiermengsel in. Voeg die watermengsel en vanielje by en meng liggies tot ‘n dun beslag.
Giet die beslag in die koekbak. Mikrogolf ongeveer 5 min oop by 100 % tot gaar. Laat koek in die pan afkoel.
Keer koeklaag uit, verwyder papierhanddoek.
Halveer met ‘n garedraad.
Mikrogolf 150 ml van die melk ongeveer 3 ½ min oop tot kookpunt.
Maak die vlapoeier met die oorblywende melk aan en voeg die sout by. Klop dit by die kookmelk. Mikrogolf dit ‘n verdere 5 min by 100 % krag tot dik en gaar en klop dit elke minuut goed.
Plaas die vla in ‘n bak koue water om af te koel en roer dit gereeld om te voorkom dat ‘n vel bo-op vorm.
Verroom die botter of margarien en strooisuiker. Voeg vanielje by en meng. Klop die koue vla geleidelik daarby in. Smeer dik tussen die koeklae en ook bo-op en aan die kant.
Bewaar die koek in die koelkas.

SJOKOLADEKOEK MET FRAMBOOSSOUS

Dié sjokoladekoek (met knoffel!)

Bestanddele
225 g ongesoute botter, plus ekstra om die pan mee te smeer
40 g kakaopoeier
1 t sout
225 g water
240 g meel, plus ekstra om mee te bestrooi
350 g karamelsuiker
1½ tp koeksoda
2 groot eiers
120 g suurroom
1 t vanielje-ekstrak
½ swart knoffelbol (brawes kan ’n hele bol gebruik)
Framboossous
2 k vars/gevriesde frambose
3 e suiker
3 e balsamiese asyn
½ t suurlemoensap

Metode

Koek
Voorverhit die oond teen 180 °C.
• Smeer die bakplaat met botter en bestrooi met meel.
• In ’n kastrol, meng die botter, kakaopoeier, sout en water.
• Plaas oor medium hitte en roer.
• Verwyder van hitte en plaas eenkant.
• Meng die meel, suiker en koeksoda in ’n groot mengbak.
• Voeg die sjokolademengsel bietjie vir bietjie by en roer aanhoudend.
• Voeg die eiers een vir een by. Meng goed voor die volgende eier bygevoeg word.
• Voeg die suurroom en vanielje-ekstrak by en roer tot glad.
• Verwyder die knoffelhuisies van die halwe knoffelbol en maal in ’n stamper en vysel tot so fyn as wat jy dit kan kry. Meng by die koekmengsel.
• Plaas die mengsel in gietvorms en bak vir sowat 40 tot 45 minute.
• Plaas op draadrakkie om af te koel.

Framboossous
• Kombineer al die bestanddele in ’n kastol en kook oor medium hitte (druk die frambose effens fyn) vir sowat 8-10 minute.
• Gooi die mengsel deur ’n sif om van die saadjies ontslae te raak.
• Giet die stroop bo-oor die koek en bedien.

Maybe you’ve already heard of this popular Custard Cake, but it was new to me.
The ‘magic’ of the cake is that you make only one custard-like batter, which then separates into three layers while it bakes. So you get a cake layer on top, a custard layer in the middle and another dense layer on the bottom. It  has a wonderful vanilla/orange flavour and simply melts in the mouth. Absolutely yummy!
One of the keys to this recipe is to have all the ingredients at right temperature. Make sure the  eggs are at room temperature, the butter is melted and cooled, and the milk is lukewarm. Also make sure you beat the egg yolk mixture well, and also the egg whites, before you combine the two.
 I do think that this cake is at its best on the day it’s made. Make it into dessert with a dollop of whipped cream and some mixed berries.

·  125g butter, melted & cooled
·  500ml milk
·  1 tsp vanilla extract or vanilla paste
·  130g pure icing sugar, sifted
·  4 x 70g eggs, at room temperature
·  pinch salt
·  1 tbs caster sugar
·  115g plain flour
·  finely grated zest of 1 orange (optional)
·  extra icing sugar, for dusting .

Preheat oven to 150C, fan-forced. Butter and line 20cm square cake tin with baking paper.
Warm the milk and vanilla in a small saucepan on the stove until it is lukewarm.  Or microwave on MEDIUM for approx. 3 minutes. Set aside.
With a stand mixer or handheld mixer, whisk the egg yolks and the icing sugar until light and fluffy. Add the melted butter and stir until well combined.
Now fold the flour into the batter, and slowly add the lukewarm warm milk. It is a very liquidy batter.
In the bowl of a stand mixer, beat the eggwhites with a pinch of salt until they are foamy, add the caster sugar and beat until thick. .
Gently fold in the eggwhites, one third at a time. I found it best to use a whisk for this. The whites will look a little curd-like after mixing them in, just try to mix/fold them to the point where there are no big chunks. .
Pour the batter into the prepared cake tin and bake for between 45 – 60 minutes. (mine took 55 minutes, but it will depend on your oven) If you find the top is browning too quickly, just cover with a piece of baking paper. The cake is cooked when there is a sight ‘jiggle’ when you gently shake the tin. If it is still quite runny, leave it in for another few minutes.
Remove the tin from the oven and allow the cake to cool completely.
I like to trim off the edges, but it’s not necessary. Cut the cake into serving portions and dust with icing sugar.
TOP TIP
If you’ve forgotten to get the eggs to room temperature, you can quickly do this by placing them in a bowl of hot tap water for 5 minutes.  Egg whites at room temperature have more lift when whisked** .thecooksroom*

Maak botter versiersuiker aan met wit wooden spoon 
100 gram wit wooden spoon met 
200 gram versiersuiker 

Klop baie goed voeg bietjie melk by tot dit reg is vir smeer, smeer 1 st laag aan sit in yskas vir n uur. 
Smeer nou 2 de laag aan leker dik, hou kook water en n warm mes byderhand byderhand Smeer nou die koek glad en laat die mes kort kort warm word in die water . As die prentjie n gedrukte prent is maak dit los van die plastiek lagie en sit bo op jou koek net so, as dit van fondant gemaak is, tel versigtig op en sit dit ook net so op die koek, rond af met n ster buisie om die rante.

CHOCOLATE HAZELNUT DACQUOISE WITH FIGS


CHOCOLATE HAZELNUT DACQUOISE WITH FIGS:

Serves 8-10
FOR THE DACQUOISE
10 free-range egg whites
275g (10oz) caster sugar
50g (1¾oz) cocoa powder
250g (9oz) ground hazelnuts
FOR THE FILLING
750ml (26fl oz) double cream
1½ tbsp vanilla bean paste
75g (2¾oz) icing sugar
10-12 figs
TO DECORATE
twisted willow, or other decorative twigs
sugar spiral (optional)

TO MAKE:
1 Preheat the oven to 180°C/Gas Mark 4 and line two baking sheets with silicone paper. Draw a 23cm (9in) circle on each sheet of paper, then flip them over.
2 Make sure your bowl and whisk are very clean, free of grease and dry, as any water or grease will affect the meringue.
3 Place the egg whites in the bowl and whisk with a food mixer or an electric whisk on high speed to soft peaks. Add the sugar, a spoonful at a time, whisking until the mixture is smooth and glossy.
4 Sift in the cocoa powder and whisk until combined. Fold in the ground hazelnuts, taking care not to knock the air out of the meringue. Spoon into a piping bag fitted with a 1cm (½in) plain nozzle. Lift the paper up and pipe four blobs on the corner of each tray, then press the paper to them to stop it moving.
5 Pipe concentric rings to fill the circle on each of the lined trays. Next, pipe six small discs around the trays (you will have some mixture left over). Bake for 15-20 minutes until golden and just firm to the touch. Transfer to a wire rack to cool completely.
6 Meanwhile, whisk the cream, vanilla bean paste and icing sugar together until you have firm peaks.
7 Place one of the meringue discs into a 23cm (9in) metal ring on a cake stand or serving plate, trimming it if necessary, then spread a layer of cream 1cm (½in) thick on top. Cut 10 figs in half from top to bottom. Place these upright into the cream around the edge of the ring, cut side facing out. Continue all the way around until you have made a border of figs around the edge of the cream. Fold the small discs of meringue into the remaining cream, along with 2 quartered figs. Pile the cream into the centre, pressing it lightly so that it holds the figs in place against the ring.
8 Place the second meringue disc on top, trimming if necessary, then press down lightly. Lift the ring off the dacquoise. To help you do this cleanly, warm the ring very quickly with a blow torch, or dip a cloth into hot water and run it around the ring.
9 Decorate with twisted willow and fig wedges, and a sugar spiral, if desired

Lunette Cabaco
Cake

250ml boilingwater

5 ml rooibostea
125ml cocoa
4 extra large eggs
375ml sugar
125ml oil
5ml vanilla
450ml Flour
15ml baking powder
2ml salt
Preheat the oven at 180 degrees.

Boil the kettle, pour boiling water over rooibostea bags. Let it soak.

When its strong enough(to taste) mix tea with the cocoa to a paste.(Sift cocoa beforehand).
Separate the eggs yolks and whites. Put then whites to one side for later use.
Cream the Egg yolks and sugar. Mix the oil and Vanilla together.
Mix the Egg yolk mixture, tea mixture and oil mixture together.
Sift the dry ingredients and mix the liquids in.
Whisk the egg whites until stiff and fluffy. (tip: sprinkle a teaspoon of sugar over the whites before you start, makes it stiff faster.)
Fold the egg whites into the batter.
Pour mixture into medium(20cm) cake pan with removable bottom.

Bake for 45 minutes. Or until tester comes out clean

While you are waiting for the cake to finish. Start with the icing.
400ml boiling water
10ml rooibostea
250ml sugar
50ml butter
50ml cocoa
50 ml mazina
7ml vanilla

Boil water pour over tea. Let it soak.
Pour tea into a pot, pour sugar in and let it dissolve in mixture. Mix butter in.
Sift Cocoa and mazina together. Take some of the tea mixture and make a paste of the mazina and cocoa. Mix the cocoa mixture with the tea mixture and let it simmer until it thickens. Stir essence in and let cool. When cake comes out. Let it cool down till warm and pour icing on top. Smear icing over cake with spatula. Let it cool down and serve.*Huisgenoot* foto >
