DOUGHNUTS
1 extra-large egg, beaten
125ml milk
5ml vanilla essence
60ml castor sugar
250ml flour
3ml baking powder
Vegetable oil for deep frying
Method:
Whisk egg, milk and vanilla to combine.
Sift dry ingredients and gradually add... wet ingredients.
Mix well to combine.
Heat 5cm oil in pot and deep fry teaspoons of batter until puffed and golden.
Drain on kitchen paper.
Toss in cinnamon sugar while hot.
Eat immediately when cool.

Baked Doughnuts
makes 24
1 kg cake flour
1 sachet of instant yeast
1 cup sugar
1 tsp salt
1-2 tsp fine cinnamon
2 cups milk
1 cup boiling water
100gr butter
2 x 100gr slabs chocolate
125ml sprinkle nuts or toasted almonds
Preheat oven to 180C.
Cut the butter in small cubes and place in a mixing bowl. Add the boiling water and allow the butter to melt completely. Add the 2 cups of milk and keep ready. Mix the dry ingredients and add the liquids while mixer is running. Keep about 100ml of the milk/butter mixture to use as a wash for the donuts. If you are doing this by hand, place dry ingredients on a clean work surface, make a well in it and add the water slowly while mixing it with the flour. When completely mixed, knead for about 5 minutes until dough is elastic and ready to roll out.Roll out the dough to about 10cm thick and use a doughnut cutter to cut out the donuts.Brush the donuts with the milk/butter liquid and leave to rest for about 10 minutes and then bake them in a preheated oven for 15 minutes or until they are golden brown.

3 1/2 cups all-purpose flour
2 (.25 ounce) packages active dry yeast
3/4 cup milk
3/4 cup white sugar
1/4 cup butter
1/2 teaspoon salt
2 eggs
2 quarts oil for deep frying
1 cup confectioners' sugar for dusting
Directions
In a large mixing bowl combine 1 3/4 cups flour with yeast. In a saucepan heat milk, sugar, butter and salt until butter melts. Stir milk mixture into flour along with eggs, beating with a heavy-duty electric mixer on low for 30 seconds, just to combine. Increase speed to high and beat 3 minutes. Add the remaining flour, a little at a time, stirring with a spoon to make a firm but pliable dough. Knead dough on lightly-floured work surface 4 to 5 minutes until smooth and supple. Transfer to an oiled bowl. Cover and let dough rise until it doubles in size, about 1 hour.
Turn dough out onto floured surface, punch down and roll out to 1 /2- inch thickness. Cut out doughnuts with a floured doughnut cutter; re roll trimmings and cut them into doughnuts as well. Transfer doughnuts to baking sheets, cover and let rise 45 minutes.
Heat oil in a deep-fryer to 360 degrees F (180 degrees C). Fry doughnuts, in batches, turning several times, until golden all over. Using a slotted spoon remove doughnuts to a rack to drain. 155 ml louwarm karringmelk
50 ml strooisuiker
70 g botter, gesmelt
2 eiers
10 g kitsgis
365 g (650 ml) koekmeel
1 x 30 ml-botteltjie rooi koskleursel
Vulsel
300 ml melk
3 eiergele
45 ml mielieblom
5 ml vanieljegeursel
60 ml strooisuiker
Plaas karringmelk, suiker, botter, eiers, gis, koekmeel en kleursel in bak van elektriese menger. Klits op hoë spoed met menger se K-spaan tot mengsel in een bal saamkom. Plaas deeg in skoon bak. Bedek bak met kleefplastiek en laat rys deeg tot dubbel die volume, sowat 45 – 60 minute. Sprinkel meel op werkvlak, keer deeg uit en druk plat tot sowat 1 cm dik. Gebruik doughnutdrukker van 10 cm en sny sirkels uit. Plaas op bakplaat wat met meel besprinkel is. Laat rys weer tot dubbel die volume, sowat 30 minute. Maak terwyl die deeg rys die vulsel. Plaas al die bestanddele in ’n mengbak en klits met draadklitser tot gladde mengsel. Plaas in middelslag-pot oor lae hitte. Hou aan roer tot mengsel verdik soos ’n witsous. Roer vir nog 5 minute of tot blink voorkoms. Skep in skoon bak en plaas kleefplastiek direk op vla. Laat koel af.Verhit sonneblomolie tot warm in ’n middelslag-pot en gooi gerysde deegsirkels in warm olie. Diepbraai 3 – 4 sirkels op ’n slag vir sowat 3 – 5 minute per kant of tot goudbruin. Dreineer op kombuispapier en rol in kaneelsuiker. Skep afgekoelde vla in spuitsak met ’n 5 mm-tuit. QUICK DOUGHNUTS:
[GOLDEN CLOUD RECIPES]
Makes :10 - 12 depending on size
INGREDIENTS
500 g Golden Cloud Scone Mix
65 g butter
200 ml milk
1 egg
Oil for deep fat frying
420 g castor sugar
INSTRUCTION
1) Rub the butter into the Golden Cloud Scone Mix until mixture resembles breadcrumbs.
2) Beat the egg and milk together and cut into the dry mixture with a palette knife until mixed through.
3) Place dough onto a lightly floured surface and lightly press out into a 15 mm thickness.
4) Cut into shapes using a cookie cutter. Cut a hole in the centre of each shape to form the doughnuts.
5) Preheat the oil in a large heavy-based saucepan and add the doughnuts in batches.
6) Fry until cookies are golden in colour.
7) Remove from oil with a slotted spoon and place on paper towel to drain.
8) Allow to cool slightly before rolling in the castor sugar
