SWEETCORN FRITTERS & YOGHURT DIP

100g plain flour,

1/2tsp baking powder,
1 egg beaten,
4Tbsp whole milk,

olive oil,
2spring onions cleaned & finely chopped,

2Tbsp chopped coriander,

250g can sweetcorn,drained & dried on paper towel,
sea salt &freshly ground black pepper.

METHOD:
Mix together all ingredients for the dip,taste & season as necessary,set aside
YOGHURT DIP:

250g natural yoghurt,

1/2-1 red chilli, deseeded&finely chopped,
juice of ½lime
3Tbsp chopped coriander.
Sift flour & baking powder into a mixing bowl.
Season with salt&pepper.

Mix together,make a well in the middle & add the egg & milk.

Whisk,gradually bringing the flour into the wet mixture until it forms a smooth batter

Add 1Tbsp of olive oil & whisk again until smooth,adding a little more milk if needed.

Stir the spring onions,chilli,coriander &sweetcorn into the batter &mix well.
Heat a large frying pan &add a glug of oil.
Put a heaped dessertsp of mixt per fritter into the hot pan, pushing it down lightly.
Fry in batches for 1-2min on each side until golden.
Serve with yoghurt dip
