BRUSCHETTA WITH TOMATO AND MINT





BRUSCHETTA WITH TOMATO & MINT:
6 canned whole tomatoes roughly chopped, 4 mint leaves,juliened, 1 clove garlic crushed, salt&pepper to taste, extra-virgin oil for drizzling & 4 thick slices of a french loaf (lightly toasted). METHOD: In a pan over med heat, add tamatoes, mint & garlic. Season with salt & pepper, drizzle with olive oil & cook for 30-35mins until a thick sauce forms Spread every slice lightly with herb-garlic butter, top with tomatoe mixture.
