No Bake Lime Cheesecake
Ingredients
2x 250ml whipped cream (or equivalent)
1 Packet Lime Jelly
250g cream cheese, (at room temperature)
1/2 cup granulated sugar
1 cup crushed pineapple, drained
Vanilla wafers, crushed or make Tennis biscuit crust
Directions
Dissolve Jelly in 1 cup hot water; allow to cool.
In a separate bowl, beat softened cream cheese.
Add cooled Jelly and sugar.
Stir in pineapple.
Line bottom of a casserole dish with crushed vanilla wafers.
Pour cream cheese mixture on top of crumbs.
Top with additional crumbs. Chill.
