FRIED CALAMARI

Calamari Fritto

4 cups all-purpose flour
1/2 cup confectioners' sugar
1 teaspoon salt
1 teaspoon pepper
1 pound calamari, cleaned and julienned
1 cup milk
Vegetable oil
Seasoned salt
Combine the flour, sugar, salt and pepper in a bowl.
Dip the calamari strips in the milk, then separate them on a strainer. Dust the strips with the seasoned flour.
Fill a heavy sauce pan with vegetable oil to about 4 inches up from the bottom. Heat the oil on the stove to 350 degrees, keeping a thermometer in the oil to prevent overheating.
Fry the calamari 2-3 minutes. Drain on absorbent paper. Sprinkle with seasoned salt and serve immediately.**Roadfood* 



CALAMARI RINGE

Hier is die lekkerste calamari resep.
Vat jou calamari ringe en gooi dit in bak water waarin so 3 -4 eetlepels koeksoda geroer is.
Laat dit so 4 ure daarin lê.
Hoe langer dit lê, hoe sagter is dit.
Spoel jou calamari nou baie goed af met koue water.
Da
n vat jy klein pkt self raising, 1 en halwe tl sout en halwe botteljie robertson se visspeserye en meng dit. Doop jou calamari ringe in die meel en druk goed vas sommer met jou hande tot goed bedek.
Bak in deepfryer in baie warm olie tot crispy.
As sout kort strooi sommer oor as net klaar gebak is.
Bedien op gegeurde rys met n tartar sousie en knoffelbotter.**

Ingredients

Calamari

125ml flour
salt and pepper to season
500g calamari rings or pieces, defrosted
2eggs, whisked
250ml fresh breadcrumbs
oil for shallow-frying
lemon wedges

Tartar Sauce
200ml mayonnaise
100ml sour cream
2 Tblsp capers, chopped
1 tsp chives, chopped
1 tsp parsley, chopped
1 garlic clove, crushed
30 - 45ml lemon juice
salt and pepper to taste

Method

Calamari
• Season the flour with salt and pepper.
• Dust the calamari with the flour, then dip into the eggs and then into the breadcrumbs.
• Ensure each piece is well coated with the crumbs.
• Refrigerate for about 30 minutes.
• Heat enough oil in a pan for shallow-frying and fry the calamari until done.
• Serve immediately with tartar sauce, lemon wedges and chips or a side salad.
Tartar Sauce
• Blend all ingredients together until smooth.
