BANANA PANCAKES




BANANA PANCAKES
:

3 large eggs,
115g flour,
1 heaped tsp baking powder,
140ml milk,
pinch of salt,
2 knobs of butter,
3 Tbsp caster sugar,
4 ripe bananas &
double thick cream to serve.
METHOD:
Seperate the eggs,putting the whites into one bowl&yolks into another.Combine flour,baking powder&milk with egg yolks&mix until it forms a smooth thick batter.Whisk the whites with salt until they form stiff peaks.
Fold into batter.It is now ready to use.Heat a non-stick frying pan over a moderate heat,Pour some of the batter into the pan&fry for a couple of mins until it starts to look golden&firm.Loosen with a spatula&flip pancake over.Continue frying until golden.Melt the butter&sugar in a seperate pan over a low heat until it forms a caramel sauce - about 3mins.Moira Botha Dyer
