STICKY DATE-TOFFEE PUDDING

225g pitted dates,
1tsp bicarb,

85g unsalted butter softened,
170g caster sugar,
2 large eggs,

170g self-raising flour,

1/4 tsp ground mixed spice,
1/4tsp cinnamon,

2 Tbsp Ovaltine,
2Tbsp plain yoghurt.
TOFFEE SAUCE:
115g unsalted butter,
115g muscovado (unrefined sugar)

140ml double thick cream

METHOD:
Preheat oven to 180*C.
Put dates in a bowl with the bicarb and cover with 200ml of boiling water.
Leave for a couple of mins to soften,then drain.
Whiz dates in a food processor until pureed.
Meanwhile,cream butter & sugar until pale using a wooden spoon,add eggs,flour,mixed spices,cinnamon & Ovaltine.
Mix very well,then fold in the yoghurt & pureed dates.
