GRILLED NECTARINES
GRILLED NECTARINES with BERRY-NECTARINE PUREE

5 large,ripe nectarines,
1 Tbsp vegetable oil,
2 Tbsp sugar,
¼ Cup strawberries,washed & hulled,
½ lemon,juice only,fresh basil/mint leaves for garnish.
1.Preheat a grill pan over med-low heat. Cut 4 nectarines in halves, remove pips. Brush halves wih oil & sprinkle cut-sides with 1Tbsp sugar.
Place them on the grillpan, cut sides down & grill for 2mins. Turn over & grill another 2-3 mins until they are tender.
(2)Meanwhile, boil water in a pot,once boiling add remaining nectarines until skin starts to loosen then transfer to a bowl of ice-water.
(3)When cool,drain, peel&cut in halves,remove pips.Roughly chop nectarines&transfer to a blender
(4) Roughly chop strawberries & place in blender, along with remaing sugar, lemon juice & 1Tbsp of water. Puree until smooth, adding more water if necessary. Taste & add more sugar if desired.
(5) Arrange grilled nectarines on a platter, cut sides up. To serve drizzle with berry/nect puree & garnish with basil or mint leaves.Serves 4.* Resep geplaas deur Moira Botha Dyer
