IRISH COFFEE

This recipe from the Irish themselves. Enjoy
Into a stemmed glass, put two teaspoons full of brown sugar.
Add one third Irish whiskey and two thirds really hot strong blask coffee.
The glass should be filled one centimetre of the brim.
Stir well to ensure that all the sugar is dissolved.
Then carefully float over the back of a spoon a collar of lightly whipped cream.
Part of the pleasure comes from sipping the hot coffee and whiskey through the cool cream. SLAINTE*
