INSALATA CAPRESE



INSALATA CAPRESE:

230 g fresh mozzarella,

3 tomatoes,thinly sliced,salt &
freshly ground pepper,
extra-virgin oil for drizzling,
basil leaves for garnish.
Place mozzarella in the freezer for about 15 mins, then slice thinly, about the same size as tomatoes. Arrange tomatoes & mozzarella on a round platter & alternating a slice of mozzarella for every 1 or 2 slices tomato in an overlapping pattern....
Season with salt & pepper. Drizzle with olive oil & garnish with basil leaves. Serve immediately or refrigerate covered until ready to use. Bring to room temperature before serving. (Serves 4)all recipes* Resep geplaas deur Moira Botha Dyer
