2 knoffelhuisies fyngedruk
1 groot ui fyngekap
250g varkwors(uitgedruk) of gesnipperde bacon
3kop broodkrummels
2 eiers
1tlp elk cumin, paprika, tumeric & kerrie poeier
2etlps worcestersous
1/2tlp sout; vars gemaalde swart peper
1etlp asyn
2etlps meel
1/2tlp suiker.
METODE:
Klits eiers & meng alles saam.
Rol goed op,op 'n meelbestrooide plank.
Rol goed toe in foelie & bak in voorverhitte oond 180gC vir 1uur of tot gaar.

VLEISBROODJIE
Hierdie is vleisbroodjie resep van my ma – sy is so 4 jaar gelede aan kanker oorlede en elke keer wat ek dit maak verlang ek my dood na haar. Sy was regte ou voorslag op Clanwilliam waar hulle elke jaar busse vol blomkykers kosgegee het en daar is menig mens die Namakwaland in met Ouma Elsa se Vleisbroodjie resep. Die kinders kannie wag vir die left overs wat ek die volgende dag op hulle skoolbroodjies sit nie….lol
Ouma Elsa se vleisbroodjie:
Pak onder in broodpannetjie:
Blikkie pynapelstukke
Strooi so 40 ml bruinsuiker oor
Strooi 5 ml kerriepoeier oor
Skud so 15ml worcestersous oor
Meng:
Ongeveer 600ml maalvleis
1 koppie Oats
1 eier
1 blikkie kondensmelk
2 eetlepels fyngekapte uie
10ml sout
2ml peper
5ml mostertpoeier
(klein bietjie kerriepoeier en borrie as jy lus het vir meer Kerrie-smaak broodjie)
Druk die maalvleismengsel vas in pan bo-op die pynapperstukke
Bak vir uur by 180 grade celcius
Laat staan klein tydjie en dop uit – pynappelstukke le nou bo-op. Sny in skywe en bedien.

MINCE ROLL WITH MUSHROOM AND CHEESE FILLING
500 g lean minced beef
5 ml salt
Freshly ground black pepper to taste
1 onion, finely chopped
1 egg, lightly beaten
200 g fresh mushrooms
3 rashers bacon, rind removed
40 g fresh bread crumbs (200ml)
200 g grated Cheddar cheese (250ml)

METHOD:
Mix meat, salt, pepper, onion and egg lightly with a fork.
Spoon meat on a piece of wax paper. Spread meat mixture in a rectangle 250mm x 200mm and 15mm thick.
Chop mushrooms and bacon in a food processor. Add breadcrumbs and mix.
Spread mixture over meat, sprinkle cheese over and roll up.
Press edges down firmly.
Remove wax paper and place meat roll in a buttered oven dish. Brush roll with a little cooking oil or melted butter and bake at 160°C for 1 hour. Serve immediately.
6 servings. Can be served with creamy potatoes, glazed carrots, spinach salad. # meatloaf

MEATLOAF
1kg lean ground beef
3/4 teaspoon salt
1/4 teaspoon ground black pepper

1/2 cup bread crumbs
1/3 cup milk
1 teaspoon Worcestershire sauce
1/4 cup finely chopped onion
1/4 teaspoon dried leaf thyme, crumbled
GRAVY
3 Tablespoons butter
1/3 cup flour
2 cups beef stock
1/3 cup milk
1/4 teaspoon dried thyme
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Kitchen Bouquet seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Preheat oven to 350 degrees F. Grease a loaf pan, or line with parchment
paper.
Mix ground beef, salt, pepper, eggs, bread crumbs, milk, Worcestershire,
onion, thyme, and rosemary.
Pack into loaf pan or shape into a loaf and place on a baking sheet.
Refridgerate for 1 hour to set.
Bake for 1 hour and 10 minutes.
While the meatloaf is baking, prepare gravy.
To prepare the gravy, melt butter in a medium-sized sauce pan.
Add flour and stir. Cook the flour and butter mixture stirring constantly
for 3-5 minutes.
Add the stock and stir with a wire whisk until blended.
Add milk, thyme, Worcestershire sauce and Kitchen Bouquet. Stir to blend.
Adjust seasoning with salt and pepper to your taste and serve over
meatloaf.
