Coconut Custard Pie
Coconut anything is my all time favorite thing...love, love, love it! I came up with this Coconut Custard Pie recipe after having dessert in a restaurant that didn't have good cocount flavor. This is super coconutty (if that's even a word) and this one is fresh out of the oven. Needless to say, this isn't meant to be eaten everyday, but it's well worth the calories1 c. shredded sweetened coconut
4 large eggs
12 oz can evaporated milk or half & half
3/4 c. granulated sugar
1/4 tsp nutmeg
1/4 tsp salt
1 tsp vanilla
1/2 tsp coconut extract (optional)
1/4 c. coconut butter or cream of coconut (such as Coco Real)
9 in. deep pie shell
Preheat oven to 375, Beat eggs with sugar, spices and extracts.
Heat milk with cream of coconut or coconut butter if using in microwave for 2 min or in saucepan only until heated through and slowly add to egg/sugar mixture while stirring. Add in shredded coconut and fill pie crust. Bake on cookie sheet about 30 min, remove when center set and knife comes out clean.
