BBQ CHICKEN WINGS
24 Granny's chicken wings
1 cup beer (or
non-alcoholic beer)
3 tbsp bottled hot
pepper sauce
1/4 to 1/2 tsp cayenne
pepper to taste
1 1/2 cups chilled blue cheese dressing
1 quart chilled mixed veggies - celery sticks, carrot sticks,
green onions, cucumber spears
3 tbsp cider vinegar
4 tbsp corn oil
3 tbsp fresh lemon juice
6 tbsp hot melted
butter
Rinse chicken wings, pat dry. Combine the corn oil, pepper
sauce, vinegar, lemon juice, beer, melted butter and cayenne in a bowl. Whisk
until very smooth. Toss wings in the sauce and allow to stand at room
temperature 45 minutes while preparing the barbecue.
Heat the barbecue to medium hot. Lightly oil the grill. Using tongs, remove chicken from sauce, reserving all liquid in bowl. Place wings on the grill, 4 inches (10 cm) above the heat and sear quickly on both sides 3-4 minutes. Continue grilling the wings, basting with sauce and turning until the wings are tender, a rich deep golden brown and slightly charred at the edges. Total cooking time will be 15-18 minutes. Transfer to large wooden platter, mounding to serve.

Sticky Chicken Winglets
20 chicken winglets
For the marinade:
4 tbsp dark soy sauce
Freshly ground black pepper
250ml sweet chilli sauce
250ml smoky barbecue sauce
Micro coriander, to
serve
4 spring onions, finely sliced , to serve
Limes to squeeze, to serve
How to make Sticky Chicken Winglets
Preheat the over to 200°C and lightly grease a roasting tin with oil or cooking spray.
In a large bowl mix together the marinade ingredients.
Add to chicken winglets and mix until fully coated.
Transfer to the roasting tin and spread into one even layer.
Bake in the oven for 15-20 minutes until the winglets are cooked through and golden.

Sticky BBQ Chicken Wings
1/4 cup tomato sauce
1/3 cup barbecue sauce
2 teaspoons Worcestershire sauce
1/4 cup brown sugar
2 teaspoons smoked paprika
12 chicken wings, cut in half at joint
Whisk tomato, bbq, worcestershire sauces, sugar, seasonings and salt and pepper in a jug
Place chicken in shallow ceramic dish and pour over marinade. Coat to cover. Refrigerate at least 2 hours.
