CABBAGE SALAD WITH POPPY SEED VINAIGRETTE



CABBAGE SALAD
 [COOKING FROM SCRATCH]

1 small cabbage, finely sliced
Red cherries
POPPY SEED VINAIGRETTE:
Makes 1 cup of dressing.

¼ cup sugar
1/3 cup red wine vinegar
2 TBS fresh lemon juice
¼ tsp salt
2 TBS chopped onion
2/3 cup vegetable oil
2 tsp poppy seeds
METHOD:
In a blender or mini-prep processor, process the sugar, vinegar, lemon juice, salt, and onion together until well blended. Add the oil and process for 5-10 seconds.
Stir in the poppy seeds.
Keeps refrigerated in an air-tight for one week.
WHAT TO DO:
Mix everything in a bowl and chill.
