Mango Cheese Cake Recipe
Perfect for a weekend dessert!

What you will need:

250g tennis biscuits
125g butter, melted
500g cream cheese, softened
2 eggs
¼ cup lime or lemon juice
3 mangoes
½ cup caster sugar

How to prepare:

1. Crumb the tennis biscuits and add the melted butter, press into a springform pan and allow to cool.
2. Peel and chop the mangoes.
3. Mix the cream cheese, caster sugar, eggs, lime or lemon juice until smooth.
4. Fold the mixture into chopped mangoes and pour over the crust.
5. Bake at 160˚C for 40 minutes and allow to cool for 30 minutes then refrigerate overnight.
6. Top with a few mango slices and serve.
