Thai Chili Sauce
1/2 cup rice vinegar (if not available, use white wine vinegar)
¼ cup sugar
½ cup water
¼ cup fish sauce (if not available, use light soy sauce)
2 Tbsp soy sauce
1 Tbsp minced garlic
dried hot pepper flakes (1 tsp=mild, 2 tsp=medium, 1 Tbsp=hot)
2 Tbsp corn starch
Mix together all ingredients, except corn starch, in a small sauce pan and bring to boil over high heat. Reduce heat to medium and continue to cook until liquid reduces by half.
Reduce heat to low; whisk in corn starch; continue to cook for 2 minutes to allow sauce to thicken..

Thai Peanut Sauce for pasta

1/3 cup peanut butter, softened

3 tbsp water
2 tbsp soy sauce
juice from 2 limes
1 tbsp fresh minced ginger
1/2 tsp brown sugar
1 clove garlic, minced
1/4 tsp red pepper flakes, or to taste
salt to taste
Preparation:Whisk together all ingredients in a small bowl. If needed, you can microwave the peanut butter for a few seconds first to soften it up.
