1/2 cup water
1 tsp Baking Soda
1 tsp Vanilla Extract
50g butter softened
1 cup brown sugar
1 tsp vanilla essence
1 egg beaten
2 ripe bananas mashed
1 cup Carrot (grated) loosely packed in cup
1 cup walnuts (or any nuts you have) chopped
1 1/2 cup wholemeal flour
1/2 cup Bran
1 tsp Baking powder
1 tsp mixed spice

1. Heat oven to 180
2. Beat butter, vanilla and sugar until thick, light and creamy. Then beat egg in. Mixed in banana, carrot and nuts. Add baking soda and mix well.
3. Stir flour, bran, baking powder and mixed spice together. Add to wet mixture and fold for 2 min together. DO NOT OVERMIX.
4. Spoon batter into greased loaf tray. Bake 45 min (leave in tin for 10 min before turning out) It freezes well.
PS: Oorspronklike resep het dadels in maar ek hou nie daarvan so dit vervang met appel gerasper en verskillende sade bygesit (minder as handvol)**
