BLONDIES

BLONDIES:
A white chocolate brownie is called a blondie, and here's how to make them.
Ingredients:
1/2 cup unsalted butter, melted and left to cool.
1 cup flour
1/2 tsp baking powder
A pinch of salt
3/4 cup Demerara
1/4 cup white sugar
1 tsp vanilla extract
1 large egg
1 cup white chocolate chips
Method:
Pre heat your oven to 180 degrees Celsius
Grease an 20cm square brownie tin and line with baking paper (I like to use silicone baking paper so the blondies don't stick)
Whisk together the flour, baking powder, and salt in a big bowl.
Stir the brown sugar, white sugar and vanilla into the melted butter, then stir in the egg. (Don't whisk it in vigorously as you will end up with a foamy mixture and we want to avoid this).
Stir the melted butter mixture into the dry ingredients, then fold in the chocolate chips.
Pour the batter into the lined brownie pan and smooth the top nicely. I like to sprinkle a few chocolate chips I top for fun.
Bake the blondies for approximately 20 minutes or until the centre feels firm but not soggy and wet. Once the blondies have cooled completely, remove them from the pan and cut into the desired size.
