OXTAIL IN SLOW COOKER

Slow Cooker settings: Low 7 to 9 hours or High 5 hours
2,5 kg oxtail, cut into slices
60 ml flour with salt and pepper to taste
50 ml oil
1 x 410 g can diced tomatoes
50 ml tomato paste
10 ml brown sugar
2 cloves garlic, minced
1 bay leaf
2 sprigs fresh thyme
2 sprigs fresh oregano
3 ml Grated nutmeg salt and pepper to taste,about 5ml each
2 onions, chopped
2 sticks celery, sliced
2 large carrots, sliced
2 potatoes, peeled and sliced (optional)
750 ml beef stock
250 ml dry red wine
1. Dredge oxtail in seasoned flour. Heat oil and brown oxtail. Place oxtail in the slow cooker bowl and add all other ingredients except stock and wine.
2. Heat stock and wine to boiling. Add to the meat and vegetables. Place bowl in the slow cooker and cover with the lid. Cook for the recommended time, then serve with mashed potatoes and green vegetables.
3. To thicken the liquid, mix 15 to 30 ml cornflour with a little stock or wine. Stir the mixture into the casserole about 30 minutes before the end of the cooking time.*

Baie maklik en min bestanddele.
1 beesstert, verbruin in bietjie olie in n swaarboom pot.
Skep oor in prutpot en voeg 1 blik tamaties, 4.uie en ander groente na smaak by. Ek het sommer murgpampoentjie, wortel en aartappel ingesit. Voeg 2 koppies kookwater by en ook n pakkie beesstert soppoeier en so 2 eetlepels worcestersous. Skakel prutpot op outomaties aan en kook tot sag en lymerig. Gewoonlik so 4 tot 6 ure. Ek sit bestanddele die oggend in en dan is dit reg vir aandete of ek laat dit oornag gaar word.

BEESSTERT IN DIE SLOWCOOKER

Het laas Sondag my beesstert die vorige aand in slowcooker gesit, met 2 oxtail-blokkies, op LOW. Sondag-oggend het ek die aartapels, uie en ander groentes bygevoeg. Sit dan cooker op HIGH. Met etenstyd was dit ......HEERLIK!!

Beef and red wine Cubed steak

cooked slowly in a rich red wine and mushroom sauce produce a rich aroma that makes the mouth water.
1 kg blade steak, cut into 5 cm / 2 inch cubes
2 tsp / 10 ml beef stock powder
½ cup / 125 ml boiling water
1 x 280 ml tin of cream of mushroom soup
280 ml can of mushroom pieces or freshly chopped.
1 pkt onion soup mix 125 ml – 250 ml cup of red wine.
Method: Place beef cubes into a 6 L slow cooker. Mix together the boiling water and the beef stock powder in a large bowl. Add the soup, mushroom pieces, pkt soup mix and the wine. Stir. Pour over the beef cubes. Cover and Cook on Low for 7-9 hours or on High for 3 ½ hours – 4 ½ hours. Serve with rice, pasta or mashed potato.

Pak vleis onder in slowcooker.Gooi droë uiesoppoeier oor en daarna die worcestersous.Pak aartappels en wortels bo-op die vleis.Sit slowcooker op auto en kook vir 8 ure.

SPESIALE STEAK

Daar is nie werklik 'n resep aan die steak ding verbonde nie. Ek het dit maar so uit nood gebore laat ontstaan.
Ek gebruik maar net 1 pakkie bruin uie soppoeier en so 'n koppie meel, gooi dit saam in 'n plastiek sak en ...skud goed.
Nou neem jy jou stukke tenderized steak en skud dit weer in die sak met die meel mengsel, braai dit vinnig in 'n pan met olie, jy seel eintlik net die lot so bietjie.
Dan pak jy hierdie stukke steak in 'n prutpot in lae met jou sous bestanddele.
Die sous bestanddele is soos volg:
Half koppie tamatie sous
koppie chutney
half koppie Worcestersous
half koppie kookolie/olyfolie, meng goed braai gekapte uie in pan (Dit hang af hoeveel stukke steak jy gaan gebruik) Meng dan hierdie sous mengsel met die gebraaide uie .(Ek roer gewoonlik op hierdie stadium 'n mespunt koeksoda by my sous mengsel (die tamatiesous kan die sous soms te suur laat smaak) . Dan skep jy hierdie stukke steak en sous om die beurt in die pot en laat prut op Low vir so een en 'n half uur.
Ek kan jou verseker mense lek hul lippe af . Moet net nie sout byvoeg nie want onthou jou bruin uie soppoeier is sout genoeg. Ek maak soms net om die sous bietjie dicker te maak die meel en Margerine mengsel aan en strooi dit so oor die verskillende lae.
My steak maak ek dan so: Braai in pan 1 groot uie in ringe gesny. Skep uit. Druk die steak in die souspoeiermengsel en bruin aan albei kante. Skep die uie en steak in lagies in die Prutpot. Maak in die pan waarin jy die steak geseel het, omtrent so 1 tot 2 koppies sous, met die souspoeiermengsel. Gooi dit oor die steak. Klein sampioene kan bygevoeg word. Laat stadig op Low vir so 2 ure prut. Dis baie lekker en sag.*

BBQ BEEF RIBS IN SLOW-COOKER

Beef spare ribs cooked slowly in a rich BBQ sauce.
3 lbs / 1.5 kg beef ribs, trimmed of fat
salt / pepper to taste
2 medium onions diced
1 tbsp / 15 ml soy sauce
1 cup / 250 ml BBQ sauce
2 tbsp / 30 ml white vinegar
2 tbsp / 30 ml molasses or sugar
Method:
Heat cooking oil in frying pan. Add the ribs. Brown all sides. Drain. Place ribs in 5 L/ 5 quart slow cooker.
Mix all other ingredients except the onion in a bowl.
Stir in the onion, and pour over the ribs. Cover. Cook on Low for 8 – 10 hours or on High for 4 -5 hours.

Brisket

Slow Cooker Size: 5 1/2- to 6-quart oval
I think the slow cooker was invented with brisket in mind. This sweet and savory version is perfection itself, melting in your mouth. It'...s very important to buy a "first-cut" or "flat-cut" brisket, which has far less fat than other cuts.
Servings: Makes 8 servings.
Ingredients
4 Idaho potatoes, peeled and cut into 1/2-inch slices
2 tablespoons vegetable oil
1 (5- to 6-pound) first-cut or flat-cut brisket
2 large onions, peeled and cut into 1/4-inch slices
4 garlic cloves, peeled and minced
1 (12-ounce) can beer
1/2 cup low-sodium beef broth
4 celery stalks, cut into 1/2-inch slices
1/2 cup tomato paste
1 (14 1/2-ounce) can stewed tomatoes
2 bay leaves
1/2 cup packed dark brown sugar
1/3 cup Dijon mustard
1/2 cup red wine vinegar
1/4 cup regular molasses
1/3 cup soy sauce
1 teaspoon paprika
Salt and freshly ground black pepper to taste
Preparation
Lay the potatoes across the bottom of the insert of the slow cooker.
Heat 1 tablespoon of the oil in a large sauté pan over medium-high heat. Brown the brisket well on all sides. Place the browned meat in the slow cooker insert. Add more oil, if needed, and sauté the onions until soft, about 4 minutes. Add the garlic and cook 2 minutes more. Scrape the vegetables into the insert.
Pour the beer and broth into the sauté pan and bring to a boil, scraping up the meat bits in the pan with a wooden spoon. Pour over the meat. Add the celery, tomato paste, stewed tomatoes, bay leaves, brown sugar, mustard, vinegar, molasses, soy sauce, and paprika to the insert. Cover and cook for 8 hours on LOW or 5 to 6 hours on HIGH, or until the meat is fork-tender.
Remove the meat to a cutting board and slice it thinly against the grain. Skim any fat from the cooking liquid, discard the bay leaves, taste for seasoning, and add salt and pepper. Transfer the meat and potatoes to a serving platter or serve them on individual plates. Spoon the cooking liquid on top or on the side.*

3 carrots, sliced
3 potatoes, cut into quarters
1 onion, sliced
2 celery stalks, sliced
1 lb. stew meat, cut into sm. chunks & covered with flour
1 can Campbell's vegetable soup
Water
Put everything in crock pot and add water to the top of the veggies. Turn on crock pot to low in morning. When you get home, add 1 can of Campbell's vegetable soup. Stir and it's done. – COOKS..

1 to 2 lb. chunked meat or hamburger
Salt and pepper
2 c. tomatoes or tomato soup
Put this in crock pot as listed. Cook 2 hours on high or 4 to 6 on low; all day if need be.
I didn't care for pork but used beef, lamb, or deer. Always started this night before if I had to go to town (40 miles) and left men at home for dinner. Usually all gone when I got home for supper! – www.cooks..

1/2 c. fine bread or cracker crumbs
2 eggs, beaten
1/4 c. milk
2 tbsp. grated Parmesan cheese
1 tsp. salt
1/8 tsp. garlic salt
1/4 tsp. pepper
2 carrots, peeled & cut into 1" slices
1 (6 oz.) can tomato paste
1 c. water
1 c. beef bouillon
1/2 tsp. oregano
1 tsp. seasoned salt
1/2 tsp. basil
1 (10 oz.) pkg. frozen Italian vegetables, partially thawed
Mix hamburger with bread crumbs, eggs, milk, cheese, salt, garlic, salt and pepper. Form into 2" balls. Drop carrots in bottom of slow cooking pot. Arrange meat balls over carrots. Combine tomato paste with water, bouillon, oregano, seasoned salt and basil. Pour over meat, cover and cook on low for 4 to 6 hours. Turn heat to high. Add Italian vegetables. 1 lg. onion
1 c. each frozen green beans, peas, corn or whatever vegetables you wish
1 can Campbell's tomato soup
1 can water
2 tbsp. Minute Tapioca
1 1/2 tbsp. cornstarch
1/4 tsp. pepper
1 tsp. parsley flakes
1 tsp. salt and salt substitute
1 tsp. Lawry's seasoned salt(gebruik SAfrikaanse seasoned salt)

EASY CROCK POT ROAST

3 lb. chuck roast
1/2 can beef broth
1 c. flour
1/2 tsp. garlic powder
1 or 2 cloves garlic
1 medium onion, diced
2 tbsp. olive oil
1 bay leaf
dash of salt and pepper
Wash chuck roast. Season generously with salt, pepper and garlic powder. Coat with flour.
Place floured roast into oiled skillet and brown lightly on both sides.
While browning roast, add diced onions to skillet.
Transfer roast and onions to greased crock-pot. Toss in whole garlic cloves and bay leaf.
Pour in 1/2 can beef broth over roast and add salt and pepper.

CROCK POT BEEF ROAST

3 to 4 pound roast beef or round steak
salt and pepper
1 small onion, chopped
1 pkg. brown gravy mix
1 cup water
½ cup catsup
2 teaspoon dijon mustard
½ teaspoon garlic powder
½ cup red wine (optional)
Place meat in slow cooking pot. Sprinkle meat with salt and pepper. Combine remaining ingredients; pour over meat. Cover and cook on low 8-10 hours.
If desired, add small peeled potatoes and carrots. Sauce can be thickened with 2 tablespoons flour dissolved in 1/4 cup of water.
I usually skip the potatoes and carrots and mix the roast or round steak with egg noodles.

CROCK POT POT ROAST DINNER

1 beef roast
1 env. onion soup mix (Bruin uiesop ???)
1 can cream of mushroom soup
1 c. water
4 potatoes, peeled and cut into small chunks
5 carrots, scraped and diced
In a crockpot, put beef roast in center with carrots and potatoes around it. Sprinkle onion soup mix on top. Pour mushroom soup over this, then pour the cup of water over also. Cover and cook on low for at least 8 hours. – www.cooks.com

3 cups chopped onions
2.5 cups coarsely chopped green bell peppers, about 2 cups.
4 large beets, peeled and diced, about 2 cups.
2 cups of baby carrots or diced carrots.
4 cloves garlic, minced.
2-3 pounds beef stew meat, cut into one inch cubes, or whole and you can cut it after it is cooked.
4, 6-ounce can tomato paste.
2 tablespoons of Hungarian paprika or regular paprika (I used regular)
1 teaspoon ground black pepper
4 cups hot cooked noodles, do not add in freezer bag, cook separately, day of cooking.
1/2 dairy sour cream, do not add in freezer bag, use as garnish, day of cooking.
Divide everything into two gallon freezer bags, shake it up, seal, label and put in the freezer. EXCEPT the sour cream and noodles, the sour cream is for garnish after the meal is cooked.  Cook the noodles separately, the day of cooking.
Day of cooking, dump it into your slow cooker and cook on high for 4 to 6 hours, or low 6-8 hours, depending on your specific slow cooker.

Old Fashioned Pot Roast

An old fashioned pot roast recipe cooked slow cooker style. This tenderizes the meat and allows the flavours fully to develop.
4 medium potatoes cut into chunks 2 medium onions cut into good size cubes
4 Medium carrots, cut into thick slices
1.4 kg boneless beef blade roast (or similar)
½ / 125 ml boiling water
1 tsp / 5 ml beef stock powder
2 ½ cups of mixture of frozen beans / peas
For gravy: 2 tsps / 30 ml flour 1 tsp beef stock powder salt / pepper to taste Place potato, carrot and onion in bottom of 5 litre slow cooker. Place the roast on topCombine water and stock powder in small bowl, stir. Pour over the top of meat. Cover. Cook on Low for 10 – 12 hours or on High for 5 – 6 hours until tender. Add the peas/ beans. Cover. Cook on High for 15 minutes.Make the gravy in a saucepan with the remaining liquid. Serve with meal.Serves 8 – 10.

ROPA VIEJA in a SLOW COOKER

Ingr:
1 x 900g beef chuck pot roast:
3 cloves of garlic crushed;
2 red & 2 green bell peppers cut into large wedges(seeds removed);
1 yellow & 1 sweet onion cleaned & cut into wedges;
1/2 a can (185g) tomato paste or to taste;
¼ Cup red wine vinegar;
garlic powder to taste;
seasoned salt to taste & ground black pepper to taste.

METHOD:
Pierce beef roast to tenderize it & let the flavours in. Place into a slow cooker with garlic, peppers & onions. Stir in tomato paste & red wine vinegar. Sprinkle with garlic powder, seasoned salt, salt & black pepper. Cover & cook on Low until the beef is tender, 7-8hrs. Remove beef & shred into long strands using two forks. Return meat to slow cooker & combine with vegetables. Cook on Low until meat & vegatables are very tender about 30mins. Remove & serve warm.

SAVOURY ROAST

2 kg beef/ silverside
1 chopped onion
50 ml gravy powder mixed with 250 ml water
60 ml tomato sauce
25 ml Worcester sauce
12.5 ml soy sauce
60 ml red wine
25 ml mustard
1 crushed clove garlic

Rub meat well with salt and pepper.
Place in slow coocker
Mix rest of ingredients and pour over meat
Simmer for 9 hrs on low
Cut meat into slices and pour sauce over meat in slow cooker.
