TRIPPLE BERRY PIE BARS



TRIPPLE BERRY PIE BARS


CRUST:
1 Cup quick oats,
2 Cups flour,
1 ½ Cups sugar,
¼ tsp salt,
1 ½ Cups butter.

THE FILLING:
4 whole eggs,
2 Cups sugar,
1 Cup sour cream,
¾ Cup flour,
pinch of salt,
½ tsp lemon zest,
1 tsp vanilla extract
3 x 16oz bags strawberries, blackberries & blueberries.

MAKE CRUST/TOPPING:
Preheat oven to 180dC. Grease a baking dish. Put oats in food processor & pulse until a coarse 'flour' forms. Add the regular flour, sugar & salt & pulse a few times to mix. Cut butter into small cubes & add to flour mixture. Process until butter is evenly distributed, but mixture is still crumbly, 30-60secs. Keep 1+1/2Cups of mixture and keep aside to use for topping. Press remaining mixture into baking pan (9x13inch) & bake 12-15mins. Cool for at least 10mins.

MAKE FILLING:
Whisk eggs in a large bowl, add sugar, sour cream, flour, salt, lemon zest & vanilla. Gently fold in the berries & spoon mixture over the crust.. Sprinkle mixture kept aside over filling & bake 45-55mins. Cool at least 1hour before cutting into bars. You can serve bars warmed, chilled or at room temperature. Have them with a scoop of ice-cream or on their own.
