TOFFO LUX BLONDIES

TOFFO LUX BLONDIES                                  



Ingr: 1C butter;
1C light brown sugar;
1/2C granulated sugar;
2tsp vanilla;
2 eggs;
2+1/2C all-purpose flour;
1tsp bicarbonate of soda;
1/2tsp salt (or 1/4tsp if prefer)
2C toffo-lux cut into small bits.
METHOD: 
Preheat oven to 180C. Cream butter & sugar in mixing bowl of an electric mixer. Add vanilla & eggs & mix until well incorporated. On low speed, add dry ingredients until just combined. Stir in cut bits of toffo-lux.
Spread in 22x34cm baking dish (don't make it a thicker layer) & bake for 30mins until center is just firm.
Remove from oven & let cool completely. 
Top with Butter Cream:
Ingr: 
1/2C room temperature butter;
1/2C cream cheese;
2+1/2-3C icing sugar;
1/2C small bits of toffo-lux.
METHOD:
Cream butter & cream cheese together until smooth. Add icing sugar on low speed. Turn speed up to med & mix well until smooth.
Spread mixture over cooled blondies & sprinkle with cut pieces of toffo-lux. (You can use any candy pieces of choice).
