ROAST CHICKEN DINNER



Roast Chicken Dinner

Serves 4

Ingredients:
1 whole chicken
4 Tbs Pakco Portuguese chicken seasoning
2 Tbs dried oregano
4 Tbs olive oil
Salt and pepper
4 potatoes, peeled and chopped

Method:
Preheat the oven to 200C and place in a large baking tray to pre-heat.
Spatch cock the chicken by cutting out the backbone and discarding.
Press the chicken down flat to make it one even thickness.
In a bowl, mix together the Portuguese seasoning, oregano, olive oil and seasoning to taste.
Rub the spice mixture all over the chicken then place, skin side up, onto the pre-heated baking tray.
Season the potatoes with salt and pepper and add to the tray, scattering them in one layer.
Roast the chicken for 30 minutes until the skin is crispy and cooked through Expresso
