CRANBERRY BARS


CHEWY CRANBERRY BARS:
50g Flour, sifted
½ tsp Mixed Spice
Pinch of Salt
300g Oats
50g Dessicated Coconut
50g Sesame Seeds
50g Sunflower Seeds
50g Pumpkin Seeds
125g dried Cranberries
200g Unsalted Butter
125ml Golden Syrup
200g Soft Brown Sugar
125g Crunchy Peanut Butter
1tsp Vanilla

Preheat the oven to 160’C. Grease a 20x30cm shallow oven
tray. Sift the flour, mixed spice and salt into a large bowl. Mix in the oats,
coconut, seeds and cranberries. Put the butter and golden syrup into a saucepan
and stir over low heat until melted. Remove from heat and mix in the sugar,
peanut butter and vanilla essence. Pour the butter mixture into the bowl of dry
ingredients and mix with a large metal spoon until combined. Press the mixture
into the greased tray and bake for 25 minutes or until golden brown. Allow to
cool in the tray, then cut into squares. Store the bars in airtight containers
for up to 7 days. Perfect for picnics…
