MILK TART AND AMARULA TAMBOESIES: sliced with a lekker local twist.

180ml Milk
125ml Amarula
3 Extra large egg yolks
60ml Sugar
30ml Cornflour
1 Pinch vanilla seed paste, or 5ml vanilla extract
5ml ground cinnamon
1 Roll Puff Pastry
1 Egg white, lightly beaten
60ml sugar, mixed with 5ml cinnamon

Line a 15 x 15cm square dish with clingfilm.
Preheat oven to 200°C.
Heat milk and Amarula in a saucepan over a medium heat – but don’t boil.
Beat egg yolks, sugar and cornflour until well combined.
Add half the milk mixture, beating continuously, then add remaining milk. Return mixture to saucepan and cook over a low heat until thick.
Pour into lined pan, cover with a sheet of clingfi lm and chill.
Roll pastry slightly thinner and cut into 16 small rectangles.
Brush pastry with egg white and sprinkle over cinnamon sugar.
Bake for 20 minutes until puffed and golden. Cool.
Remove clingfilm from custard and spoon into a piping bag.
Carefully pipe custard onto 8 rectangles.
Sandwich closed with remaining rectangles.
