PORTUGUESE CHICKEN WRAPS



PORTUGUESE CHICKEN WRAPS
400g chicken breast fillets, 
1tsp Portuguese chicken seasoning, 
2tsp lemon juice, 
1+1/2Tbsp olive oil, 
1/3cup mayonnaise, 
1Tbsp sweet chilli sauce, 
1Tbsp finely chopped fresh coriander leaves, 
1Baby cos lettuce,shredded, 
1cucumber cut into sticks, 
250g cherry tomatoes halved&
8 mini flour tortiillas. 

METHOD 
Preheat oven to 180°C. Grease a baking tray. Place chicken in a single layer in a ceramic bowl. Combine seasoning,lemon juice &1Tbsp olive oil in a jug. Mix well&pour over chicken. Turn to coat well.Cover and refrigerate for 20mins. Heat remaining oil in frying pan over med-high heat. Cook chicken for 1-2mins each side till golden, Transfer chicken to prepared baking tray&bake for 15-20mins until cooked through. Meanwhile combine mayonnaise,sweet chilli sauce&coriander in a bowl. Place lettuce, cucumber&tomatoes in bowls.Hesat totillas in microwave,following instr on packet. Thinly slice chicken, Place in bowl. Serve chicken with lettuce, tomatoes, cucumber, tortillas & mayonnaise mixture.
