MINCE AND BUTTERNUT ROTIS
Mince and Butternut Rotis
Ingredients
30 ml sunflower oil
1 onion, chopped
15 ml (or more to taste) medium curry powder
500 g lean beef mince
1 x 410 g can chopped tomatoes
5 ml sugar
500 g butternut, cubed
6 rotis (find them in the freezer section of your supermarket) or bread rolls
Servings: 6
Method
Heat the oil in a large saucepan.
Add the onion and fry over a medium heat for five minutes before adding the curry powder and
stirring well.
Add the mince and cook, stirring until it is no longer pink.
Add the tomatoes, sugar and butternut.
Bring to the boil, then reduce the heat and simmer, covered, for about 20 minutes until the butternut
is tender.
