BRIGHT BEETROOT SALAD / GESONDE BEETSLAAI



BRIGHT BEETROOT SALAD

Ingredients

1,5 Kg Beetroot
200g Mayonnaise
200g Plain Yoghurt
Salt
4 Spring Onions

Method
Peel and quarter the beetroots.
Boil in a pot of water till beets are tender.
Drain and allow to cool. If beetroot are very large, cut into smaller pieces.
Mix mayonnaise and yoghurt together and add beetroot and salt.
Spoon onto a platter and garnish with spring onions.
