Gooi alles in n kastrol en verhit dit vir so 5min.Laat afkoel en bere in die yskas vir weer gebruik. Gebruik as n smeermiddel oor braaistukke of oor lekker Hamburger patties, hoendervlerkies!!..N.S ek gooi so n bietjie "Coke" altyd by Heerlik en maklik  *

Smelt botter in meduim groote pan roer meel by sodat dit n pasta vorm.Haal van hitte af en roer melk en room by om n basiese wit sous te maak .Sit terug op hitte om te verdik en gaar te word,roer die 3 kase by en sit dadelik voor saam met steak en chips. oja my geheim is net voor jy dit bedien klop bietjie paprika in . b/chef Kosmater

RED WINE JUS

250 ml dry red wine, whatever your drinking
125 ml beef stock
125 ml chicken stock
2 cloves of garlic
1 sprig of fresh rosemary
How to put it together
Grab a small saucepan and put it over a low heat.
Smash 2 garlic cloves with the flat side of your knife and drop them into the saucepan
Pour in the wine and submerge the rosemary sprig. If your rosemary too long to fit in the saucepan cut it in half with some scissors.
Let the red wine simmer with the herbs over a medium heat until the volume has reduced by half. This should take about 20 minutes depending on how hot your stove is. Give it a swirl around the pan every 10 minutes to combine.
Once reduced, pour in the beef and chicken stock along with a couple of turns from your pepper grinder.
Again, let the sauce reduce by half over a medium heat (let it simmer, but not boil) for about another 20 mins.
You can make this ahead of time and reheat. Leaving it on a lower heat for longer will give you a much more concentrated sauce.
Strain through a fine sieve, or just spoon out of the saucepan over your favorite bbq’d steak
This recipie will give you enough sauce for 4 steaks, however you can easily double or triple the quantities if your catering to a larger group.

2 tablespoons vegetable oil
1 onion, thinly sliced
2 cloves garlic, minced
1 jalapeno chile, minced (add more or less depending on how much heat you enjoy)
2 teaspoons cumin
2 teaspoons coriander
1 large can chopped tomatoes (or 3 medium tomatoes, chopped)
1/2 cup ketchup
1 cup cider vinegar
2 tablespoons brown sugar
1 bay leaf
1 cup chicken stock or water
In a large sauce pan over medium heat, heat oil. Add onion, garlic, and chile and slowly cook until onion becomes translucent. Add tomatoes, ketchup, vinegar, sugar, bay leaf, and stock.

Basic Vinegar BBQ Sauce

1 1/2 cups apple cider vinegar1/2 cup hot water2 tablespoons brown sugar1 tablespoon paprika1 teaspoon cayenne1 teaspoon salt1 teaspoon black pepperStir the brown sugar into the hot water. Continue stirring until the sugar is completely dissolved. Add the remaining ingredients and heat on low for... a few minutes. This perfect to coat pulled pork, but don't add so much that it gets soupy.

Basic Mustard BBQ Sauce

1 cup prepared yellow mustard
1/3 cup brown sugar
1/2 cup balsamic vinegar
2 tablespoons butter
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon cayenne
Mix all the ingredients in a saucepan and simmer on low for at least thirty minutes. This is great for southern pork style barbecue.
Once you've tried each of these BBQ sauce recipes, you can choose which is closest to what you want and begin modifying. Add or subtract ingredients, or change the amounts of different spices.
Finding the perfect barbecue sauce just takes time! Then you just have to decide whether to share your personal BBQ sauce recipe, or keep them begging!

I have included three basic BBQ sauce recipes - one for each type of main ingredient. Make the basic barbecue sauce by following the recipe, then start experimenting to develop your own signature sauce.
Basic Tomato BBQ Sauce
1 regular can of tomato sauce
1 can of tomato paste
2 tablespoons vinegar
2 tablespoons olive oil
2 tablespoons brown sugar
3 cloves garlic, crushed
4 tablespoons onion, minced
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon cayenne
fresh ground pepper to taste
Cook the garlic and onion until it's soft, and then add all the rest of the ingredients. Simmer on low for 20-30 minutes. Keep stirring it often so it doesn't burn, then refrigerate for a few days before you use it. This allows the flavors to blend and mellow.

Jack Daniel's Grilling Sauce

1/2 cup pineapple juice
3 tablespoons soy sauce
1-1/2 teaspoon garlic powder
1/4 cup Jack Daniel's Whiskey
Combine all ingredients and mix well.
Dip meat in sauce and place on grill over hot coals.
When meat is turned, brush with sauce.
Grill to desired degree of doneness.
Just before meat is removed from grill, brush again with sauce.

Jack Daniels Barbecue Sauce

Jack Daniels, about 1/2 to 3/4 cup, or to taste
1/2 cup chopped onion
4 cloves garlic, finely chopped
2 cups tomatosauce
1/3 cup vinegar
3 tablespoons
Worcestershire sauce
1/2 cup brown sugar, firmly packed
3/4 cup molasses
1/2 teaspoon pepper
1/2 tablespoon salt
1/4 cup tomato paste
1/2 teaspoon Tabasco sauce, or to taste
Combine onion, garlic and Jack Daniels in a saucepan. Sauté until translucent, about 10 minutes. Add all remaining ingredients, bring to boil. Simmer uncovered until reduced and thickened, about 15 to 25 minutes. Add more Jack Daniels if a stronger flavour is desired. Bottle and keep in fridge.

Blue Cheese Sauce

This Blue Cheese Sauce recipe is a good one to whip up when you're serving steak. Serve it on the side, or spooned on top of the meat. The sauce is so rich that a little bit goes a long way.
Yield: 1/2 cup of sauce
Ingredients:
1/2 cup heavy cream
1/3 lb. blue cheese, crumbled
1 tsp. worcestershire sauce
Preparation:
Warm cream in a saucepan by bringing to a gentle boil. Simmer 3-5 minutes, stirring as the cream thickens.
Add half of the cheese. Using a fork, mash and stir the cheese into the cream. When the cheese has melted, add the worcestershire sauce. Continue to simmer 3-5 minutes more, until sauce is thick enough to coat the back of a spoon.
Add remaining cheese. Turn off heat and serve before the cheese melts completely.

Sauce au Roquefort

Easy French Food recipe
This is a very simple blue cheese sauce recipe that you can whip up as you are grilling steak
Prep time: 15 min
Makes about 1 1/2 cups.
Ingredients
2 shallots, chopped finely
4 tablespoons butter
6 ounces blue cheese, crumbled
1/2 cup heavy cream
1/4 teaspoon pepper
Directions
Cook the shallots in the butter until soft, about 7 or 8 minutes. Don't brown them.
Mix in the blue cheese using a fork to smash it into the butter and eventually form a smooth paste.
Add the heavy cream and mix well.
Heat to just below boiling.
Stir in pepper and serve warm.

2 uie gekap
1 knoffelhuisie gekap
50ml margarien
50ml koekmeelblom
300ml melk
100ml room
50ml pietersielie
10ml sout
50ml muskadel
Metode:
Sorteer die sampioene, ui en knoffel in die margarien. Roer die meelblom by, dan die melk en dan die room. Voeg die res van die bestanddele by en meng goed. Giet oor enige gaar vleissnit
