THAI'S GREEN PASTE





MAKE THAI GREEN CURRY PASTE

Dried
1 teaspoon coriander seeds, dry roasted
1 teaspoon cumin seeds, dry roasted
1/2 teaspoon black pepper corns (optional to dry roast)
1/2 teaspoon salt
Fresh
5g (1 teaspoon) galingale, skin removed and chopped
15g (1 tablespoon) lemon grass, lover part of the stalk
5g (1 teaspoon) Kaffir lime peel, chopped
2 tablespoons coriander roots, chopped
2 tablespoons shallots, chopped
1 tablespoon garlic, crushed
1 teaspoon shrimp paste
1 teaspoon fresh tumeric, skinned and chopped
20 small, green chillies
1 cup (30g) sweet basil leaves

Substitutes
If you don’t have or can’t find some of the ingredients on the list, here are some subsitutes
Ginger for galingale
Regular limes for Kaffir lime peel
Coriander/Cilantro stalks/stems for coriander roots
Red onions for shallots
Dried Tumeric for fresh tumeric
You could use a mix of basil leaves like I did, smoked garlic instead of regular….I guess the whole point is to keep the recipe more or less the same while varying as many parameters as possible…in a sensible way *29/4/13*Lekker Resepte vir die Jongergeslag*




Thai’se Groenkerrie Paste


Martie Fourie Moolman 15 groen rissies
2 spriete suurlemoengras
3 salotte of 1 medium ui
4 knoffelhuisies
1 E fyngemaakte galangal of gemmer
4 gekapte kaffir lemmetjieblare of suurlemoenblare (kan dit ingelê kry by Woolies)
½ t gerasperde kaffir lemmetjie skil of lemmetjieskil
3 gekapte koljanderwortels
6 swart peperkorrels
1 t geroosterde koljandersaad
1 t geroosterde komynsaad
1 E suiker
1 t sout
1 t garnaalpasta (Woolies of sjinesewinkel) optioneel

Sit al die bestandele in ‘n voedselverwerker en voila! Gebruik soos benodig en bewaar in die yskas..
 Dan is daar die rooi kerrie paste en die Mussaman wat ek graag gebruik, dit het klappermelk in asook vis sous.Jy kry dit deesdae al die bestanddele in die supermark. Anders by Chinese kos markte. Ek het suurlemoengras in my tuin, groei maklik en teel baie aan, asook my eie koljanderplantjies. Ek was die wortels goed af en vries dit dan as dit skaars is in die winkels. As jy eers al die bestanddele gekoop het hou dit vir maande in die yskas.13/4/13
