French Coconut Pie
Ingredients
4 tablespoons (1/2 stick) butter, melted
2 eggs, beaten
1 tablespoon all-purpose flour
3/4 cup sugar
1 (3 1/2–ounce) can shredded sweetened coconut (about 1 cup)
1 cup milk
1 (9-inch) unbaked pie shell (Make your own, or buy it pre-made)

IMPOSSIBLE COCONUT PIE
4 eggs,
225 g (1Cup) caster sugar,
100 g softened unsulted butter,
100 g slivered almonds,
1 Cup coconut,
2 Tbsp grated lemon
2 Tbsp orange rind,
½ Cup lemon juice
½ Cup orange juice,
1 Cup coconut milk,
½ Cup sifted flour, lightly whipped cream
fresh passion fruit pulp (granadella) to serve.
METHOD:
Preheat oven to 180*C. Place eggs, sugar, butter, almonds, coconut & milk & flour in a food processor and blend until well combined. Pour into greased pie dish (26cm). Bake for 1 hour until lightly browned & set aside to cool, then refrigerate for 1 hour to chill.
