OREO CUPCAKES




OREO CUPCAKES

(makes 16)
Ingredients for Cupcake Mix:
200G Plain Flour
40G Cocoa Powder
240G Castor Sugar

3 Tsp Baking Powder

80G Unsalted Butter
2 Eggs
200ML Milk

2 Tsp Vanilla Extract
16 Oreos

Ingredients for Buttercream Icing:
175G Softened Unsalted Butter

350G Sifted Icing Sugar 1 Tsp Vanilla Extract
1 - 2 Tbs Milk

3 or 4 Crushed Oreos.

Crush your Oreos in a food processor or put them in a bag and bash them with a rolling pin - a good way to take out all of your mommy frustrations. You may use more or less Oreos, depends on how you want the Buttercream Icing to look.
Sift the flour, cocoa powder, baking powder and salt all together. In a seperate bowl, beat the butter and sugar together then add the vanilla extract. Add in the eggs, 1 at a time and whisk them slowly. Alternately, add the milk and flour.
Place your oreo in the bottom of your cupcake wrappers ( I only use half of an Oreo, I twist the two sides apart and put the one half aside for later use. The side without the white filling goes on the bottom.) Divide the cupcake batter between the 16 cupcake wrappers.
Bake for 18 - 20 minutes on 180 degrees celsius or until a toothpick comes out clean. Cupcakes must be left on a wire rack till they are completely cooled down.
Beat the butter, Icing Sugar and Vanilla Extract together for a few minutes until it becomes smooth and fluffy. Add the milk, a little at a time. We then start adding the crushed Oreos, spoonful by spoonful, until you are happy with the look. Put onto your cupcakes.

Vir Smullekker Sondag het ons die koning van "cupcakes" - Oreo verrassing. Maak so:
1. Plaas oreo koekie in "muffin liner" soos voorberei vir jou muffins.
2. Gooi lepelvol karamel bo-op. Plaas oreo koekie bo-op.
3. Gebruik enige cupcake beslag, en gooi beslag bo-oor.
4. Bak soos jou resep sê.
