PUTU MUSHROOM PIE





 PUTU MUSHROOM PIE
500g cooked putupap(stywepap)prepared with 750ml mealie meal to 1L of water,
 500ml cream,
250ml grated Parmesan cheese,
30ml butter,
oil,
1 leek chopped,
500g mushrooms sliced,
15mlchopped parsley,
1ml cayene pepper,
 salt&pepper.
Preheat oven to 180dC.Grease 20x28cm ovenproof dish.Pour the cooked pap into a cold large flat dish,spread out to 1,5cm thick &let cool.Mix cream &Parmesan cheese.

Heat butter and a little oil in a pan.Saute the leeks.Add mushrooms and saute a few mins,adding parsley & a little cream mixture.Season with salt&pepper &add cayene pepper. Remove from heat.Cut cold pap to make 2 layers to fit dish.Spoon some cream mixture into dish,put 1/2 of pap on top.Pour over leek&mushr mixt
Put other 1/2 of pap on top.Pour rest leek & mushr mixt &spread out evenly.Pour over the rest of cream mixture. Bake for 30mins until set.*Moira Botha Dyer
