BACON & CHEESE CROQUETTES:
4 rashers rindless bacon
finely chopped;
2C cold mashed potatoes,
seasoned to taste;
1 egg yolk;
2 onions finely chopped;
¾ C flour;
40g mozzarella cheese cut
into 1cm cubes;
1 ½ C bread crumbs;
1 egg;
¼ C milk &
Canola oil for shallow
frying.
Method:
Heat a non-stick frying pan
over med heat. Cook bacon until golden & crispy, drain on paper towel.
Combine mashed potatoes, egg yolk, onions, bacon & flour in a bowl. Roll
heaped tablespoons of mixture into 20balls. Push a cube of cheese into centre
of each ball & secure with potato mixture. Whisk egg & milk together.
Roll croquettes in flour, then in egg mixture & coat with bread crumbs.
Heat oil in frying pan & fry turning once until golden brown & cooked
through. Drain on paper towel. Serve with a salad.
